Hello all you lovely people. Here's my recipe for a spicy tomato pabda fish curry. And here's the background to how this landed on my plate.
I have grown up eating different kinds of fish for almost every single day. In an Assamese household, fish is as common as rice everyday. And I have loved fresh water fish since I was a child. But moving away from home and settling in a new place can really alter our eating habits. Firstly, you will never find all the local ingredients that go into making a typically Assamese dish. Secondly, you also find other ingredients and kinds of food taking over your palate. It's only natural. But lately I had been feeling really sad about my drastic reduction in fish consumption. So day before yesterday, I packed by shopping bag and head to the fish market in all enthusiasm. Got everything fresh that I could find and padba fish had to be there. So here I am feeling like myself, eating my fish happily. And this curry is so simple to make and drop dead gorgeous. Spicy, sweet and tangy - all at the same time. But the best part? It makes me feel like myself again.

Let's all take a minute of silence for Babi Guling, suckingly pig that has been roasted, shredded, marinated, fried in all its glorious forms. Our driver Denny said this was one of the best; and he wasn't kidding.

》2 types of crackle, the flash fried and the pressed and crispy
》Sweet satay stick with a zesty hit of lemongrass
》Chilli picked beans and sprouts to pack a punch
》Fluffy white rice with hints of a nice nutty coconut taste
