  • Buffalo Tofu Wings by @thecuriouschickpea 💛 Recipe:
Ingredients⠀
1 lb extra firm or super firm tofu⠀
6 tbsp cornstarch, arrowroot, or tapioca starch⠀
1/4 cup plant milk⠀
⠀
BREAD CRUMB MIXTURE⠀
1 cup panko style bread crumbs⠀
2 tbsp olive oil⠀
1/2 tsp paprika⠀
1/2 tsp salt⠀
freshly ground black pepper⠀
1 tbsp fresh minced parsley⠀
⠀
BUFFALO SAUCE⠀
6 tbsp (90g) red cayenne pepper hot sauce, ideally Franks RedHot⠀
3 tbsp (35g) vegan butter⠀
1/8 tsp granulated garlic⠀
1/8 tsp salt⠀
TO SERVE⠀
Vegan bleu cheese or ranch style dressing⠀
romaine, sweet peppers, croutons, avocado for salad⠀
⠀
INSTRUCTIONS⠀
Preheat the oven to 425 ºF and lightly grease a large rimmed baking sheet.⠀
If using extra-firm tofu press out the extra water: Slice your tofu into 6 width-wise slabs and wrap in a lint-free towel or paper towel. Place some weights over the wrapped tofu, like a heavy cast iron skillet or books atop a baking sheet. Let drain for about 20-30 minutes before continuing.⠀
Cut your tofu into 18 'wings' or ~1/2" sticks. Cut the block of tofu into 6 slices width-wise if you haven't already for pressing, then slice each of those slabs into 3 slices lengthwise.⠀
Put the cornstarch (/arrowroot or tapioca starch) in one bowl, the plant milk in a second bowl, and mix together the bread crumb mixture in a third bowl. Pour some of the bread crumb mixture onto a plate.⠀
Dip each tofu 'wing' into the starch, followed by the milk, then roll in the breadcrumbs on the plate. Place the wing onto the prepared baking sheet and repeat with the remaining 'wings.' Use one hand for the starch and bread crumbs and your other for the milk to keep breading from clumping on your fingers. Add more of the breadcrumb mixture to the plate as needed.⠀
Bake the prepared tofu at 425 ºF for 25 minutes, flip, then bake an additional 10-15 minutes until the tofu wings are nice and crispy.⠀
While they're baking, make the buffalo sauce. Melt the vegan butter and stir in the hot sauce, granulated garlic, and salt.⠀
Put the tofu wings in a large mixing bowl and toss with the buffalo sauce to coat. Enjoy! #veganfoodspace

  • APPLE CINNAMON PB TOAST ✨ This morning I was craving something sweet and hearty for a snack, so I whipped up this toast 🙌🏼 To be honest, I’m not much of a morning snacker, since my morning smoothie keeps me full and satisfied until lunch, but I’ve been SO much hungrier this week than usual 🤷‍♀️ This is what I love about intuitive eating- Instead of fighting it or trying find ways to “curb my hunger” (eyeroll 🙄), I’ve been embracing it and eating when I’m hungry. What a concept, right? 😂.

So all I did for this beaut was fry up some veggies (broccoli, mixed peppers, courgette, cherry tomatoes & mushrooms) until soft, then I added in 1/4 of a jar of Napolina ‘no added sugar’ tomato & chilli pasta sauce (the bombbbb) 🍅

👉🏼 Then once that had sat simmering for a little while I added in two pre-cooked & chopped up @lindamccartneyfoods veggie sausages and half a pack of @tildarice spicy Mexican rice! 🌶

Not the most attractive dinner ever but hot damn it always tastes so good. Win 🥳

Primero que todo: NO existen las vacas lecheras. 🐄 Como todo mamífero, la madre vaca produce leche SOLO si se queda embarazada. Este embarazo es provocado, inyectando a la vaca de forma artificial semen. Cuando el ternero nace, se le separa de su madre, y es que nosotras nos alimentamos de la leche que es para ese ternero, no de la que le sobra. El ternero será mantenido apartado y podrá ser criado para producción de carne o para la industria lechera. En definitiva, es un maltrato psicológico y físico brutal para madre e hija. Mucha gente no ve el maltrato detrás de este producto, incluso hay personas que se quedan estancadas en el vegetarianismo por esto mismo: pero oculta la misma realidad. El consumo de leche también se hace mediante productos que la contienen (galletas, patatas fritas, QUESOS, etc.), y caseína (en alimentos con leche e incluso en preservativos). Además, se mantiene el mito de que la leche es una fuente increíble de calcio cuando en realidad se ha descubierto que las poblaciones que más consumen este producto son las que más osteoporosis tienen. Y, ¿qué hay de que el 70% de la población mundial es intolerante a la lactosa? No es nada raro: sino que una humana no es un bebé vaca y por tanto no tenemos las lactasas para su correcta digestión. Somos el único mamífero que bebe leche después del destete y es de otra especie, ¿resulta coherente, natural y estrictamente necesario? ¿Qué opináis? ¿Consumís estos productos? 🥛🚫 Imágenes de: @weanimals

  • 🌱When one door closes...🌱
The last few days have been tough to say the least. On Sunday we moved out of the boat we've called home for the last 6 months. Monday Pedro headed back to Brazil, and we have no idea when we'll see each other again. 🌱
I'm really tired. Tired of uncertainty. Of not really having a solid foundation to build from. Of moving. Of just not knowing. Of not being able to do the things I want to do. Or do things as well as I know I could. 🌱
But, it's these difficult situations that can teach us more than if we are just comfortable and 'settled'. And they can make us stronger too. 🌱
Recently, I'd been feeling so frustrated at not 'knowing' what is going to happen. Then I had a realisation that we actually never really 'know' anything anyway. Nothing is guaranteed. And that perhaps what I need to do more than anything is just let go. Of expectations. Of what 'should' be and just 'be'. Enjoy the moment I'm in. Accept everything changes, nothing stays the same. Including me. And worry about tomorrow when it comes. 🌱
This period of change has led me to do lots of reflection too. Living on a canal boat has definitely been a huge life changing experience for me. One I've loved, but also hated at times (peeing outside isn't fun long term). It's pushed my limits, it's made me question everything, and shown me just how strong I am. It's also been absolutely hilarious at times, and a hell of a lot of fun. Especially on moving day with the walkie talkies 🌱
Everything's a mess at the moment. But I wouldn't change a thing about the last 6 months. I just hope Pedro can come home soon.

But for now, I'll wait to see what adventure is behind the next door that opens for me...whatever that may be. 🌱

The baboons in the picture live with less than 20 people in a warm sub-humid area of Latin America on a small concrete island in the middle of an artificial lake. No matter what material their cage has been built, they have been stripped of their freedom to live under conditions they didn't choose to and in which they'll live for around 30 years. Those thirty years are the estimated life that zoos proudly claim to extend as a result of living in captivity, but in response of that kind of propaganda, we gotta ask ourselves starting from empathy, how it would be like to live 30 years without freedom?

Both elements were great but I'd love to seperate them and mix and match them with other components. Maybe something like a celery and EVOO heavy broth or zucchini, or zucchini blossom and ricotta tortellini to bring some freshness to balance the umami? 🤔
