I am writing the procedure in short and sweet way, swipe for self explanatory videos and pics.
It seems very easy to cook, the tough job here is to get the ingredients right, the right amount of time u cook all veggies and yes we can try this, with 1/ 2 times I am sure it will turn out perfect :)

"My Dadi's Special Undhiyu" 😘😘😘

• Veggies to cook on slow flame (main)
Proper Oil to cook
Surti Eggplant 
Potatoes
Kandh (Purple Yam)
Surti Papdi (rub in lil salt)
Desi Valor (rub in lil salt)
U have to cover this with a plate on top of with lil water in that plate, make sure u don't keep opening this again and again and very important point that this should be cooked completely without water. Try that not even a drop of water enter this as veggies should not get sticky or should not be over cooked.

• Muthiya 
Aata and Besan (wheat flour and gram flour)
Clean chopped watery fresh methi (Fresh fenugreek)
Regular masalas (haldi, Dhaniya powder, Mirchi powder)
Garlic
Sugar
Lil lemon juice
Make dough balls
Deep Fry in oil.

• Tomato Gravy
5 mins procedure
Oil
Add tomatoes
Add water
Add Muthiya
Add Stuffed Banana.
.
• Green Masala, which u even have to use to stuff potatoes, banana and eggplant.....
Finely Crushed Coconut (good proportion)
Coriander (1 full bunch)
Green chillies paste (many, like in this we used around 100gram)
Haldi
Dhandajeeru (we used 5 table spoon)
Garam Masala (very little)
Jaggery (do not substitute with sugar)
1 Table spoon chana lot (gram flour)
Green Garlic (alot, almost 2 3 bunch)
And Oil.

• Final Step 
Add all green masala and tomato Gravy in main and let everything set on slow flame for some more time.

Note - while mixing the gas flame has to be fast.

This Gujarati dish is a delicious one.
Undhiyu dish is traditionally cooked upside down underground in earthen pots, termed "matlu", which are fired from above. Interesting!!

Was always skeptical about trying this as it looked so complicated to me! But finally got this done and super happy with the outcome. Served with Pooris and Mango Matha. 😁😁😁😍 #undhiyu #surtifood #undhiyupuri 😍
