Keto Turkey + Cheese Cucumber Rolls

Ingredients

1 ripe avocado, pitted
1 fresh garlic clove, pressed
2 tsp. fresh lime juice
sea salt and freshly ground black pepper
2 large cucumbers, ends removed
6-8 slices nitrate free turkey or ham
6-8 very thin slices all-natural high quality cheese
fresh chopped parsley
Instructions

In a small bowl, mash the avocado with a fork.
Add minced garlic and fresh lime juice.
Season with sea salt and pepper, to taste. Mix until well combined.
Using a peeler or mandolin, slice the cucumber into equally thin strips.
Place about 12 cucumber strips next to each other, on a flat surface, such as a cutting board.
Spread 4 Tbsps of mashed avocado evenly over the slices.
Then add slices of ham and cheese.
Starting at one end, tightly roll all of the cucumber slices into one long "sushi" roll.
Using a sharp knife, cut the roll into individual servings as shown in the photos.
Secure with a toothpick and place on a serving platter. Repeat with the remaining cucumber strips.
Sprinkle with fresh chopped parsley and serve immediately.

Ingredients:
4 large zucchini thinly sliced lengthwise (I used a mandoline)
1 Tbsp olive oil for brushing + 1 additional Tablespoon for sauteing
1 small sweet yellow onion, finely diced
2 fresh garlic cloves, minced
8 oz fresh mushrooms, chopped well
1 tsp dry Italian seasoning
16 ounces high quality marinara sauce
sea salt and fresh ground pepper, to taste
1/3 cup organic ricotta
1 free range egg
1/4 cup freshly grated Parmesan cheese
a handful or fresh parsley, finely chopped
1/2 cup shredded mozzarella cheese

Instructions:
Preheat your oven to 375 degrees f. and line a baking tray with parchment paper.
Lay out the zucchini strips on a large cutting board, lightly sprinkle with sea salt and pepper and very lightly brush with 1 Tablespoon of oil.
Bake strips in your preheated oven for 10-12 minutes, or until slightly tender and easy to roll. Allow them to cool until ready to handle.
Meanwhile, add remaining olive oil in a skillet over medium-high heat. Add minced garlic and cook for 1 minute, until fragrant.
Add in the onions, mushrooms, Italian seasonings and cook for 4-5 minutes.
Stir in 3/4 of the marinara sauce and simmer your mushroom sauce for about 4 minutes, or until slightly reduced.
In a medium bowl add ricotta, parmesan cheese, the egg and a tiny pinch of sea salt + pepper, and fresh chopped parsley. Stir well to combine everything.
Use a 9×13″ casserole dish or an ovenproof cast iron skillet and spread remaining marinara sauce on the bottom.
To assemble the zucchini rolls, lay out one zucchini slice on a cutting board. Spread about 2 spoonfuls of the ricotta mixture over the top, then a spoonful of mushroom sauce mix.

➡ Nutella Cheesecake Milkshakes

INGREDIENTS
500 milliliters milk
4 scoops vanilla ice cream
250 milliliters choc sauce + 1 tablespoon nutella
250 milliliters thickened cream
2 tablespoons Philadelphia cream cheese
1 tablespoon nutella for milkshake + extra nutella to drizzle on top
100 grams crushed and roasted hazelnuts
350 grams finely crushed Oreos

INSTRUCTIONS
Start off by combining the chocolate with the nutella and set aside
Add your whipped cream to a large mixing bowl and whip it to stiff peaks using either a hand whisk or an electric whisk. Refrigerate immediately
Add Milk, nutella, cream cheese and vanilla ice cream to a blender and blend on high speed until everything is well combined. You may see specs of cream cheese, just keep blending and they will disappear.
Dip the mouth of each serving glass into the chocolate sauce and let a little drip down the sides of the glass. Then dip it into the Oreos. Add your milk mixture to the glass and pipe the cream using a piping bag fitted with a 1M tip on the end. Drizzle with nutella and sprinkle crushed hazelnuts.
Serve immediately
Tip: If you want to make your milkshake extra chill on a hot day add a couple ice cubes in with your milk ingredients.

  • 💢Experience Vs Education🎓

A trainer once told me education isn’t the same as experience. He said he “knows a lot of people with degrees that aren’t good trainers, and anybody can get a certification. There are lot of trainers with certifications that don’t know what they’re doing, and anybody can just pass a test.” While this is definitely true in some cases, I didn’t like his readily dismissal of professionals who take the time to get a formal education and build their credentials. There’s a few flaws in this gross assumption. 
First, “there are lots of bad trainers that have degrees.” Yeah ok, but there’s even more bad trainers with no degrees. This applies to all professions. Sure, there are some bad doctors, and some bad lawyers, but I’m sure as hell not gonna let someone perform surgery on me that didn’t go to med school, and I’m definitely not hiring a lawyer that didn’t pass the bar. 
Second, “anyone can just pass a test, and a certification doesn’t make someone a good trainer.” That’s easy to say when you don’t have any certifications. I am a CSCS, which is the hardest test you can take in personal training. It is NOT an easy test, and it requires a degree just to take it. 
Last, a degree IS a boatload of experience itself. I spent over 2,000 hours sitting in classrooms taught by professionals with even more experience in order to know what I know today. That’s a lot of experience learning from Masters and PhDs, and you can’t get that from YouTube or Flex Magazine. Here’s some examples of what I know:

•general biology
•family relationships/life development
•science of nutrition
•intro to exercise science
•chemistry
•foods
•foods lab
•metabolism1
•metabolism2
•functional anatomy and physiology
•functional anatomy and physiology lab
•nutrition and sports

  • One of my earliest memory as a child is walking to and working the farm with my grandmother. Oh, I  looked forward to being outdoors cultivating the land and selling our produce at the Wednesday market. I love spending time with grandma producing and creating food.  I love food. I have a pallet for excellent taste and exotic aromas of spices from all over the world. A natural connection to plants I think I inherit from grandma, the shamanist healer. Growing up, I delighted in playing the tasting game with anyone who would entertain me. From just a sliver of taste, I can pick the exquisite flavour of the many spices that combine to produce a wonderful dish. I love it all, the smell, the taste, the preparation and the harvesting of good, wholesome foods. I prided in eating the way my ancestors did, the natural way, the healthy way, the harmonious way, the way food was meant to be consumed. While many of my childhood memories are long gone in yesteryears, but the freedom, joy, and the craft of our voodoo kitchen lives on and illuminates within me.

  • Did you ever hear about a cake with Superkraut? It does sound incredibly weird right? But it is PHENOMENAL!  Hanne and Rachael @butchsalads @louielouie.london  so pleasantly surprised us with Hummingbird cake layered with our Pineapple&Turmeric Kraut! And the most fabulous brownies made with out Red Beet Fermentary Sauce! That was really something beyond imagination.
