- 30ml Tikilovers Pineapple Rum 🍍
- 20ml Tikilovers 57% Rum
- 25ml The Bitter Truth Falernum
- 25ml Lime juice
- 10-15ml Passion Fruit Syrup
- 5 dashes The Bitter Truth Creole Bitters
Shake all but bitters with crushed ice / Open Pour in Tiki Coupe / Float Bitters / Garnish and decorate / Drink

Origins of Tiki Bars: 1930s
The history of Tiki drinks can be traced back to the 1930s, when a man named Don Beach opened the first Tiki bar in Hollywood, California. Don was inspired by the Polynesian culture that he had experienced while travelling in the South Pacific. To recreate the flavors that he experienced in Hawaii, Don mixed rum with fresh fruits, such as pineapple and guava.

Mai Tai (the guest bartender variation)
2oz/60ml plantation rum 2003 Trinidad @plantation.rum .5 oz/15ml Mandarine Napoléon @follownapoleon .5 oz/15ml DISARONNO @disaronno_official
1 oz/30ml fresh lime juice
.5 oz/15ml homemade ginger syrup
5 dashes angostura float .
Add all ingredients into mixing tin with ice and shake. Strain into tiki glass with crushed ice. Garnish with mint sprig and orange peel. #cheers
My trip to Seattle wouldn’t be complete without a visit to Rumba @rumbaseattle, which has one of the largest rum collections in any bar. Their house Mai Tai is made with House barrel aged Wray & Nephew, Rhum JM Gold, fresh lime, curaçao, orgeat. This was a really good Mai Tai but there was enough traditional Agricole flavor to give me a tiny bit of pause. This one even got @tikiwithray excited enough to order one himself (alongside his Agricole rum flight). I then ordered a second one made with Appleton 12. This Mai Tai was heavenly and Ray said he preferred this one too. Thank you Jen for making two amazing cocktails!
There are tropical elements at Rumba but it definitely isn’t tiki. They have a great number of classic rum cocktails on the menu and they do host a weekly tiki night. This is THE place for rum nerds in Seattle.
