  • Happy Sunday everyone! ✨I’ve been spending the past few days using social media less to spend a little more time relaxing + recharging for the week ahead, so I thought I’d share this creamy chocolate quinoa porridge I made a few weeks ago that I’m absolutely cravingggg after my 15 mile run today 😍 What’s your go-to breakfast on a Sunday?! 💛.

To make 👇🏼:
Bring 1/2 cup of quinoa in 1 cup of plant-based milk, 2 tbsp cocoa powder, a pinch of salt + 1 tbsp maple syrup to a low boil, then cover and let simmer on low heat for about 15 minutes fully cooked. Once it’s cooked, add any toppings of your choice - I caramelized a banana in 1 tsp of coconut oil, then added a handful of frozen berries, a sprinkle of hemp hearts. Enjoy! 💛

@sainsburys puff pastry
1/2 onion chopped small
1 tbsp oil
25g butter
4 green chillies & 1 clove garlic made into paste
1 tsp salt
1/2 chicken breast chopped up small
1/4 each red, green & yellow pepper cubed 
1/4 cup sweetcorn
1/2 tsp dry parsley
2 heaped tbsp plain flour
1/2 cup milk or more depending on consistency
Handful grated cheese

method:
*melt butter gently with the oil
*lightly sauté the onions
*add in the chilli & garlic paste, salt & parsley
*add the chicken & cook for around 5 minutes
*add in the peppers & sweetcorn & cook for a further 5 minutes with a lid on
*add plain flour & mix
*add in the milk & stir till it starts bubbling, it should be the consistency of a thick gloopy filling.
*take it off the hob & let it completely cool
*add the cheese. 
Take a 10 cm by 10cm piece of puff pastry
Put the mixture across one end
Roll over the pastry leaving it half open. 
Draw cuts at the bottom, roll the whole thing on itself, and make it into a moon shape. 
Brush with egg 
And bake in a pre heated oven at 200°C for 20mins.
