  • Whenever I post a before and after picture I always get comments like “beautiful before and after” and “you were pretty before you lost weight” while I’m not disagreeing with that, the fact is that when I was 311 pounds, I was invisible to pretty much everyone. When I was heavy, I would walk into a particular clothing store and the attendants wouldn’t even greet me. I never got a “Hey, how are you doing today? Are you finding everything OK? Any fun plans for the weekend?” Even just a simple “Hi” would have been nice but I never got it until I lost weight. For some reason, they were friendlier to the smaller me 🤷🏼‍♀️ I mean, I wasn’t always fat, but I was for long enough to forget what it felt like to be treated well by strangers. What was I before I lost weight, chopped liver? I am the same me. I am the same person as I had been when I was fat. The only thing that changed was my weight. This is not my reason “why” I lost weight, but it’s definitely something I’ve noticed that has changed. I’m not mad at anyone who treated me like a waste of space and I get it we all have our prejudices. Including myself. But I am encouraging everyone to take a moment, and recognize those prejudices and try to see the potential and value in EVERYONE because you know nothing about the person you’re treating poorly or super nicely so make an effort to learn about them! Looks are only skin deep, what matters is on the inside ❤️.

1 head cauliflower, (to make about 4 cups processed cauliflower)
2 eggs, lightly beaten
1/2 c. finely grated Parmesan
1/2 tsp. oregano
1 1/2 c. shredded white Cheddar 🌀 DIRECTIONS

1. Cut cauliflower into florets. Process cauliflower florets in a food processor until the texture resembles rice. Alternatively, you can grate the cauliflower.

2. In a medium bowl, combine processed cauliflower, eggs, Parmesan and oregano. Mix until evenly combined then season with salt and pepper.

3. Heat a large nonstick skillet over medium heat. Spray with cooking spray then scoop the cauliflower mixture into a small patty on one side of the pan. Repeat to form a second patty on the other side. (These are your “bread” slices.) Press down on both pieces with a spatula and cook until golden underneath, about 5 minutes. Flip and cook until the other sides are golden, about 3 minutes more.

4. Top one cauliflower slice with cheese then place the other cauliflower slice on top. Cook until the cheese is melted, about 2 minutes more per side. Repeat with remaining ingredients.

From dealing with my dad’s cancer and losing him, to a failed engagement, to college struggles due to my grief, gaining over 100 pounds, moving and moving and moving again, major mental and physical health struggles, an uncertain future and a job that made me miserable to getting healthy and living my best life. I wish I had known the difference that would be made in all parts of my life just by putting my health first. I started with that and the rest just fell into place.   • SUGAR FREE KETO COCONUT MACAROONS (GLUTEN-FREE).

Ingredients

1/3 cup water3/4 cup low carb sweetener or less to taste1/4 teaspoon sea salt3/4 teaspoon sugar-free vanilla extract 2 large eggs3-4 cups unsweetened shredded coconut start with 3 cups, add more as needed sugar-free chocolate chips optional

Instructions

Preheat oven to 350 degrees. Lightly spray baking sheet with non-stick spray.

Combine water, low carb sweetener, salt, and vanilla extract in a small saucepan and bring to a boil over medium-high heat. Stir resulting syrup and remove from heat.

Combine the egg and coconut flakes in food processor. Add the syrup and process to form dough. Using cookie scoop, place mounds about an inch apart on baking sheet.

Bake for 8 minutes then rotate baking pan in oven. Bake for an additional 4 minutes or until light brown. Cool on rack. Drizzle with melted chocolate, if desired.

I hear this all the time... Guys, the trick to Ketosis is seriously just limiting your carbs. The fat is to keep you satiated/satisfied.

You don’t need to eat spoonfuls of oil or butter... I mean unless that’s all you’re eating for the day 😁

Fats are important because they keep you full longer, but fats also contain more than double the amount of calories than protein and carbs. Calories definitely matter and if over consumed will cause weight gain or stall
. 
If you’re not losing weight and actually gaining weight... you’re more than likely eating too many calories.

What do you guys think of this?

I eat enough fats to keep me full. I eat fat bombs. I add butter to my veggies. I cook my eggs with butter or avocado oil. I add heavy cream to my coffee. I use full fat dressings and eat mayo. I eat cheese. I do eat fats... I just don’t add an excessive amount of fats. I add what taste good to me without going crazy because again... calories matter.

Remember... you ultimately want your body to burn your own fat that you have stored, right? Ok, so why add fat that your body has to burn off before getting to your own fat stores?

Yes add healthy fats to keep you satisfied and hold you off until your next meal, but just know there isn’t a specific amount you have to eat. The number that comes up on the macro calculator is the limit you can have... not what you must have.

  • I was really, really craving waffles today and I looked at the back of the box stuff to see if it was worth it to make them.  43g of carbs!! I’m all for carbs, but not for 43g of some waffles that won’t keep me full for a while.  So I looked through a few recipes and ended up tweaking my version.  If you’ve had 90 second bread before, it’s reminiscent of that.

My recipe is:
1 cup of almond flour 
1/4 cup of almond milk unsweetened **
4 eggs
1 tsp of baking powder 
1 tsp vanilla extract 
1 tsp stevia or whatever sweetener you use 
_
Mix ingredients together and pour into waffle iron and cook accordingly. 
_
This makes 5-6 mini waffles (eggo size) 
Total carbs of all waffles together is around 12.7 ish grams without sugar free syrup.  Add 5 grams of carbs per 2 tbsp of sugar free syrup

Still WAY less than the box mix.  It is a nutty flavor waffle, so if that’s a turn off for you skip the recipe but I liked the taste of 90 second bread so I don’t mind it.  I’m full after eating 2!

** I used reduced sugar with 8 grams of sugar in a 1 cup serving, I used 1/4 so 2 grams.  Unsweetened almond milk would be healthier

  • 𝕀𝕥𝕤 𝔸 𝕆𝕜! 𝚂𝚎𝚕𝚏 𝚌𝚊𝚛𝚎 𝚌𝚑𝚎𝚌𝚔! It’s definitely OK to not be OK. But we are responsible for our own happiness and if were feeling down because of something that’s happened or Happening in our lives that is out of our control then it’s time to shift those thoughts . It’s definitely easier said than done but having more practice at it makes it so much easier that you will end up having less bad days and not even realize it. Always know there’s someone else out there in a tougher situation than you are which is why we need to count our blessings and continue to be grateful. It’s a constant reminder for myself as well. These SHRIMP KABOBS are marinated in a mixture of lemon juice,  garlic,  sugar, parsley and olive oil for 1 hour prior to grilling. 😋
Don't have a great marinade recipe for shrimp?  No worries! Just use a bottle of your favorite Italian or Greek salad dressing.

They cook in a flash and these make an impressive meal for friends and family!

I woke up w more of an appetite today so I had some bacon w my Chicharron con huevo scramble w some quesito fresco and some salsa verde. 🤤🤗🤩 You will not believe I found this green salsa en la 99 cent store. It’s a legit salsa verde molcajete style. I was mind blown...haven’t went back to stock up or if they even have that item anymore.
