Cheers to finally being done all my midterms and Summer being only 6 weeks away☀️🍉🤩Here is a super easy and delicious tofu recipe that uses only 4 ingredients!! These spicy little tofu bites are perfect for meal prep because you can easily throw them in a salad, stir fry, wrap or even just have them as a snack💛💛
spicy baked tofu: take one block of extra-firm tofu, wrap it in a tea towel, and place something heavy on it (I used a textbook📚) for a couple hours. This step is important if you want your tofu to be more flavourful and crispy!! Next, slice your tofu into cubes, add to a bowl and then add 1 tsp olive oil, 2 tbsp soy sauce, + 1 1/2 tbsp sriracha🔥Gently mix to combine, then spread evenly over a baking sheet lined with parchment paper. There will be sauce left over in the bowl but set this aside to use for later. Then bake for 10 mins at 425F. Remove baking sheet from oven, flip each piece over, and drizzle the remaining sauce that was left in the bowl over the tofu and bake for another 12 mins or until crispy to your liking🌟
I added my tofu to a nourish bowl that consisted of kale massaged in lemon juice, quinoa, sliced carrots, and avocado🌱🥕🥑

I have made a delicious matcha chia pudding as one of the layers for my green smoothie .
I have mixed •3 tablespoons of chia pudding •1 tablespoon of green matcha powder •1 tablespoon of maple syrup • 2 cups of almond milk. .
say hello to our “paper towels” | have you made the switch? 🧻 swapping paper towels for cloths was one of my first zero waste acts, thanks to my then neighbor @ameliamarthelia. they’ve lasted four years, a little worse for wear but perfectly useful. aj also remarked when we were grocery shopping this weekend that we haven’t bought cleaner in a plastic bottle in a couple years either. we do still buy laundry detergent though. I truly think it only takes one small act to cascade into a whole lifestyle shift because one change causes you to begin to think of other ways you can make a difference. friends, plastic waste, climate change, my children’s future, the future of our planet really keeps me up at night so I’m compelled to keep talking, sharing + doing what I can.

Friday Dinner was Fried Green Tomato Sandwich with Satuéed Spinach, Avocado, and Feta Cheese with sides - seasoned boiled Corn, Stir-Fried Kale, and Squash and a Green Tea with Lavender and Almond Milk (by @malkorganics)
It’s funny because I know some people who would never touch a veggie in their life if they could have it that way and I know others who would only have em for the rest of their lives if they had it their way...and then there’s those of us who enjoy a balance of veggies and indulging in other yums. not to mention a serving of this has more calcium than a carton of milk, is one of the most dense sources of beta-carotene (vitamin A), vitamin C and K, iron, antioxidants, minerals and other nutrients.

In the spirit of #MeatlessMonday , here is a vegan protein-packed pesto pasta dish with veggies and herbs. We’ve got the homemade pesto “cream” sauce that I’m super proud of, along with @eatbanza chickpea pasta which, don’t be fooled, does not actually taste like regular pasta, but I had a box in the pantry 🤷♀️ So use regular pasta shells but do make this pesto sauce! In a food processor, combine basil, kale or spinach, walnuts, a few whole garlic cloves, salt, pepper, red pepper flakes, lime or lemon juice, and warm water. Add more water and nutritional yeast (if you’re keeping it vegan) until you reach the consistency you want. Pour over pasta (shells are the besttt) and enjoy!

With only subtle differences in taste and texture, curly kale and dinosaur kale can usually be used interchangeably in cooked dishes like soups, stews, casseroles, stir fries, risottos and omelettes. The only significant difference when cooking with dinosaur vs curly kale is that dinosaur kale may cook a bit faster because of its tender leaves.
