Doing this makes the potato easier to cut into thin pieces! I cut mine into about 5 pieces. I roasted all of the sweet potato "thins" for around 15 minutes on 400F. That will give you the "toast" part, but the rest is up to you! makes about 4-5 servings 
Ingredients:
3 medium cucumbers, cut in half, lengthways and thin sliced
2 ripe, firm avocados, chopped
1 small red onion, thinly sliced
1/3 cup plain Greek yogurt
juice of 1 fresh squeezed lemon
a small handful of fresh dill, chopped
1/2 tsp garlic powder
sea salt and fresh ground black pepper to taste, about 1/4 teaspoon each 
Instructions: 
In a small bowl whisk your yogurt, lemon juice, dill, garlic powder, sea salt and pepper.

In a large glass bowl add cucumbers, avocado and red onions.

Just before serving pour dressing over top and very gently toss to combine.

Enjoy!

🥙Dentro c’è la frutta, quindi a chi non piace questo tipo di abbinamento, elimini pure la frutta. Anche se la mela rinfresca e la papaya è quasi insapore. Mio marito dice che “sa di carota bollita”😄, a me invece piace.

🥙INGREDIENTI (in foto la bowl era per 2💞):
🔸Quinoa bianca (quinoa mista o cous-cous vanno bene uguale)
🔹Pollo petto (non si vede bene, ma c’è) - 2 fettine spolverate di pepe misto macinato fresco, messe in padella unta con il tovagliolo appena imbevuto di olio, a coperchio chiuso.
🔸Noci pecan 4-5pz a persona, in foto ce ne sono di più. A mio marito piacciono. Sono
•una grande fonte di Omega 6-9, che contribuiscono ad abbassare il colesterolo
•un grande antiage dalle proprietà antiosdidanti
•e molto altro ancora. Se volete che approfondisco, fatemelo sapere nei commenti🤓.

Potete utilizzare tranquillamente le noci normali📌.
🔹Mela - 1/4 di una mela grande, quindi non tanta. L’ho lasciata con la buccia, altrimenti non foto non si sarebbe vista. Meglio senza la buccia. In foto sono Gala, ma va bene qualsiasi varietà.
🔸Papaya - metà della papaya piccola, dimensioni del mango😉.
🔹Spinaci freschi (vanno bene anche rucola/songino/mix tenero) - busta da 100g.
🔸Ceci in scatola, giusto 2 cucchiai. Questi si possono anche evitare.

  • Hasselbacks and honey-garlic-chipotle salmon coming in hot for Sunday night din 🥰💯Didn’t do anything to celebrate St. Patrick’s Day this weekend, but figure some some points were earned for the potatoes on this plate 🥔☘️😂. I made almost the exact same meal several times last fall, and it was just as much of a 🥰’s and ❤️’s-kind-of-hit then as it was tonight 👏🏻.

#whatsonmyplate: honey garlic chipotle salmon 👉🏻 *recipe* 1) in a bowl, combine 1 tbsp. honey (I used manuka), 1/4 tsp. chipotle chili powder, 1 tbsp. melted ghee or butter, a pinch or salt + a pinch of pepper. Spread evenly over two 4-6 oz. salmon filets (you can easily double this to serve four). 2) in a pan, heat 1 tsp. ghee or oil for a minute; add salmon filets, skin side up, and sear for 3 mins.; flip, and cook an additional 3-4 mins. 🌶🍯 •• garlic-parmesan hasselback potatoes •• grilled asparagus 🌱

  • Had the best time on spring break!! Although I got really sick and had to rest a lot, I really just needed a break from school. It was nice to have a break and be at the beach in the sun.  This semester has definitely been the hardest for me so far, but it’s so important to focus on your physical, mental and emotional health! I’m going to try to focus more on me this part of the semester and do what I know will make me happy. My goals are to meal prep more, go to the gym consistently, take time to study each night but to also take time for myself when I know I need it. My family and friends are so important to me and their support means so much to me. They’re always been there for me no matter what❤️

  • Had the best time on spring break!! Although I got really sick and had to rest a lot, I really just needed a break from school. It was nice to have a break and be at the beach in the sun.   • Monday mornings are for bed head,dresses, and muffin making! 
My little assistant helped me make some quick and yummy raspberry/blueberry/pomegranate/strawberry/cherry oatmeal muffins this morning! 
All you need:
2 mashed up bananas (we keep our overripe bananas in the freezer for a baking day 🍌)
1/2 of a squeezed 🍋 
1/3 cup coconut oil 🥥 
About 1 cup or 3 handfuls of oatmeal in the grinder to make oat flour (or if you just have flour-use that!)
3 mini handfuls of oatmeal (Chloe thought we needed extra oatmeal-maybe for its milk supply support #keeptheboobiesfull 🤣)
1/4 cup ground flaxseed

We also added a handful each of frozen 🍓, 🍒, blueberries, pomegranates (Chlo lovessss her fruit). You could add dark chocolate too or whatever your heart desires😊

Put them in the oven at 375 for 15 mins, cool and enjoy! (All appliances are different so you may need more/less time)

Mama loves these as they are:
✅ full of soluble and insoluble fibre to keep me regular and fight off that pregnancy constipation 💩 ✅ ZERO added sugar or other crap so I know I’m fuelling my body and my little warrior princess’ with the best nutrients
✅ They are also SO EASY to make and I can keep the rest in the fridge for quick breakfasts all week 😎 #momwin ✅They’re one of the FEW things I make that my toddler will eat 😂

Seguro te has preguntado muchas veces qué es lo mejor a la hora de endulzar tu comida; hoy @mamabuscabienestar y yo comenzamos una conversación que llevó a este post. Ella, siempre en busca de mejores opciones es para su chiquis publicó sus muffins sin azúcar añadido! Definitivamente la mejor manera de bajar nuestro consumo de azúcares. 
Sin embargo toma tiempo adaptar al paladar y la búsqueda de la mejor opción puede ser extenuarte y confusa. El top de endulzantes, debido a la forma como el cuerpo los metaboliza y convierte en energía, según mi experiencia es: azúcar de coco (pero como endulza poco, tendemos a utilizar más de lo apropiado), estevia natural (sin agregados de ningún tipo), monk fruit  y sirup o sirope de maple. 
Si te gusta la miel, es una opción súper beneficiosa para la salud porque tiene aporte protéico y además acción antibacterial, pero siempre y cuando esté cruda, sin calentar. 
Si sientes que todavía necesitas ese sabor dulce, y quieres usar algo natural, el almíbar de dátil o de ciruela (o combinado es fácil). Compras ciruelas o dátiles pasados (maduros),
Mide una taza y colócalos en agua tibia. Déjalos remojando por 24 horas, preferiblemente en vidrio. Al día siguiente enjuagas, si tienen semillas las extraes y colocas un cuarto de taza de agua caliente en el procesador con los dátiles, ciruelas o dátiles y ciruela. Lo procesas hasta que quede una pasta, si está muy grueso (espeso), le colocas más agua tibia o caliente, de a cucharaditas. Tiene que quedarte como miel cruda en términos de consistencia o espesor. Se guarda en la nevera y puede durar un mes si lo almacenas en vidrio esterilizado y tienes precauciones de no contaminarlo cuando lo uses. El frasco debe tapar bien y mientras menos aire quede entre la tapa y el almíbar (más pequeño) mejor. Este proceso no incluye cocinar como los almíbares regulares, así preserva el azúcar en forma más estable

🍆LASAÑA DE BERENJENAS Y “BOLOGNESA” DE SOJA TEXTURIZADA🍆

❣️Necesitas:
- 2 berenjenas grandes
- 1 cebolla grande
- 1/2 morron rojo.
- 2 tomates pasaditos
- Sal, cebolla deshidratada y ajo en escamas.
- 2 cdas azúcar mascabo
- 1 taza de soja texturizada en seco
- Salsa de soja
- Aceite de Oliva
❣️Procedimiento:
- Cortá las berenjenas en rodajas y llévalas al horno con oliva y sal.
- Rehogá la cebolla y el morron bien chiquito con oliva y un poquito de azúcar mascabo hasta que doren.
- Hidratá la soja texturizada con agua y cuando esté blandita, condimentarla en una olla con sal, un poquito de azúcar, y salsa de soja.
- Hace de lo tomates pasaditos una pomarola y agrégale cebolla deshidratada y el ajo en escamas.
- Mezcla la pomarola con la soja ya cocinada y la cebollita.
- Cuando doren las berenjenas, arma capa de berenjena intercalada con la de soja y vas armando la lasaña.
- Metelo al horno un toque más 🕥

Combine oil, sugar and eggs and mix well. Add in flour and mix well. Blend in chocolate chips. Put in fridge for 10 mins. Bake at 350 for 10 minutes. Makes 12 cookies 🍪

Though my method of cooking it has changed (thanks instant pot!) the taste is the same! Just add some spicy mustard and you’re good to go!
