Keto 🍋Fresh Lemony Shrimp + Avocado + Tomato Salad 🥑🍤 .

makes about 3-4 servings
1 lb. raw shrimp, peeled and deveined
2 Tbsps olive or avocado oil, divided
(I use avocado oil for cooking, and olive oil as the drizzle/dressing)
1-2 fresh garlic cloves, minced or pressed
2 large avocados, diced
8 oz. mixed cherry tomatoes, cut in half
1 green chili, seeded & sliced
a good handful of fresh cilantro or flat-leaf parsley leaves, chopped
1 large fresh lemon, both juice and zest of
sea salt and fresh ground black pepper
Heat one tablespoon of oil in a large skillet over medium-high heat.
Add shrimp, and minced garlic, then cook for 3-4 minutes, or just until shrimp turns pink and is no longer translucent.
Season shrimp with sea salt and pepper to taste, remove from heat.
In a large bowl add cooked shrimp, chopped tomatoes, diced avocado, sliced chili, and chopped cilantro leaves.
Drizzle with remaining 1 Tablespoon of oil and squeeze in your fresh lemon juice, add zest, then very gently toss to combine everything together.

If you haven’t tried broccoli slaw you’re missing out!. I dressed it up with a nutrient-dense dressing I made with a handful of cilantro, garlic, spinach, tahini, and lemon. As always, feel free to experiment and substitute out any of the ingredients to suit your tastebuds. You can use this dressing with salads, with noodles, or use as a dip for vegetables. Tahini has such a nice kick and at 0 net carbs, it’s a great alternative to using oil for dressings.
To make a large batch of the dressing/pesto:
1.In a small food processor, I threw in 1 handful of fresh cilantro, 1 cup of baby spinach, 2 cloves fresh garlic, 1 tablespoon olive oil, 1/4 onion, juice of 1.5 lemons.
2.Pulsed all of the above together, then added 2 tablespoons of tahini.
3.Pulse and pureed everything above and added sea salt, pepper, and a little ginger, then ran the food processor again.
4.At this point, I did a quick taste of the sauce to see if I wanted to season with more salt, add more lemon juice, or add more herbs. This all depends on your taste buds. I mixed some of it with the slaw and put the rest in the fridge.
To make the shrimp:
1.I seasoned a handful of large shrimp with sea salt, some lemon pepper, smoked paprika, and some red chili flakes.
2.I put the shrimp and sliced mushrooms in a pan on medium heat with 1 tablespoon coconut oil and cooked on each side until pink (less than 5 mins total).

Keto Lemon Chicken Thighs With Artichokes
What Makes the Difference Between People Who Succeed and Fail on the Keto Diet… (Link in the bio 👆)
6 bone-in, skin-on chicken thighs about 2 pounds
1 tablespoon olive oil
1 teaspoon kosher salt and freshly ground black pepper
1 medium yellow onion chopped
1 cup vinegar
2 tablespoons butter
1 15 ounce can quartered artichoke hearts in water
1 lemon thinly sliced and seeded
1 tablespoon fresh parsley minced
Preheat the oven to 425°F.
Season both sides of the chicken thighs with kosher salt and freshly ground black pepper. Place the chicken thighs skin side down in a cold 12-inch cast iron skillet. Cook over medium high heat until the chicken releases from the pan and is golden brown, about 8 minutes. Transfer the chicken skin side up to a baking sheet lined with foil and topped with a baking rack. Bake for 15-20 minutes or until cooked through and internal temperature is 160°F. Tent with foil and rest for 5 minutes and the temperature to come up to 165°F.

Almond Beet Bites. 3 ingredients! 💚👉🏼 2 1/2 cups almond flour, 1 small cooked beet, sweet to taste (I used 4 tbspn maple syrup). Throw ingredients in the food processor till everything is mixed and blended. Form bite size balls, cover them with almond flour. That’s it. Simple and yummy! Keep them in the freezer if you have leftover, super yummy frozen too!

If you have an egg allergy, substitute the eggs whites with aquafaba (liquid from canned beans or yogurt or oil to coat the chicken.
Mix almond flour, garlic powder, dried parsley, paprika, salt, pepper, other herbs in one bowl. Whisk the egg whites and dip the chicken in the egg whites then in the dry mix. Bake it in the oven for 20 mins at 400 F.
“Ají verde” is ancient Peruvian for “sinus clearer” (kidding...but not really). Ají verde is one of THE most underrated condiments on the planet. It goes with everything. I’d eat my shoe with it! Dinner tonight was pan fried orange roughy and gulf shrimp, topped with ají verde ( I will disagree with the mayo and say go with olive oil and/or queso fresco or cream), with a side of sautéed shirataki rice and shallots, and roasted asparagus. 1g net carbs for this dinner which means you have plenty carbs available for wine(s) with dinner 😘

After I found out about Boston, I secretly hoped I would one day qualify. Qualifying was one of the happiest moments of my life. Then I put so much passion into training. I wanted to have an amazing day at my dream race. I was WAY too green to catch the signs during training that I was severely overtrained. So when I couldn’t hold marathon pace for the first 3 mi downhill at Boston- I was devastated.
After the race, I cried so much! We went to London the next am for @tunderface to run the @londonmarathon the next weekend. I kept it together that week until he ran a 10 min PR & I cried the entire night- & the entire way back to the US. His wild success was in contrast to my failure. I couldn’t be around anyone who had run Boston & couldn’t talk about Boston for a year without crying. It was all so raw. I isolated myself from people because I didn’t know how to process what I was going through. It felt like if I was around their success, I would be reminded of my failure. I felt like less of a runner because I failed & lost my confidence. It took me a LONG time before I could start building my confidence.
This period has been pretty tough for me- getting sick & not being able to get healthy since September wasn’t part of my grand plan. Neither was working so hard & then falling short of my marathon goal in December.
But I’m not sure why- I’m in a different headspace now. I guess I’ve realized that everyone fails- so like, I’m not THAT special. Haha. Or that most people have periods of struggles- it’s just who has the faith & patience to push through. Or that the last thing my heart needs is to be in isolation while I’m working through this. Or that being around success should ever have me comparing to my own period of struggle. I just won’t do that to myself again. It’s totally unfair to me. And really, I refuse to wallow & feel sorry for myself- because life is really wonderful- this is just one piece of it.
If you’re in your own period of struggle- please don’t do what I did- don’t take it to heart, don’t isolate yourself, don’t let this affect your worth. Because you’re more than how your running’s going. So. Much. More.
The reward of our work is not what we receive but what we become. We can then share this knowledge with others!
I can say that I am finally happiest to be in my own skin. For almost all my life I had so many skins issues such as:

Today Danica struggled with hitting.
She rode home in tears and felt deflated for letting her team down. I wanted to feel sorry for her, I wanted to make her feel better and I wanted to remind her that we all have bad days... But I reminded myself that I can’t fix everything but I can do one thing as a mother to help...I can try and teach her to BELIEVE IN HERSELF.
So we grabbed a bucket of balls and her bat and hit 100 balls! Before each pitch she had to look at me with confidence and say I CAN!
I reminded her to change the story on repeat in her head.
Whether you think you CAN of you think you CAN’T...you’re right! 😍

The sun in shining again in Sydney thank goodness 🌤 I have been a bit quiet on Insta as I am working on a few projects to share with you all soon one which is an Earth to table cookbook.
In the meantime I thought I would share a recipe which is perfect for this transitional seasonal weather. This recipe is fresh and light and my favourite colour green 💚🌱 it’s also super easy to make. 2 cups coconut 🥥 milk
2 1/2 cups Peas
1 Cup Spinach
1 whole Cucumber 🥒
1/4 cup Mint
2 Tbsps Lime juice
1 Tbsp Miso
Salt and pepper to taste
✅Place everything together in a blender except the mint and 1/2 cup peas.
✅Blend everything else till smooth.
✅Lastly you can pulse in the mint and peas.
✅Garnish with some coconut yoghurt if you like.

If at first you don’t succeed, fix your ponytail and try again.
On Thursday I literally ate seven cupcakes 🧁. I made myself sick. I have done sooooo well with not beinge eating anything. But on Friday that happened.
I have felt like 💩 the past 2 days and not sure if that was the cause or if it was something else. It would have been fine if I had one....not 7. It’s all about the balance. I wasn’t hard on myself because I know one day isn’t going to ruin everything.
It’s also important to know YOU and plan to eat according to your goals. If you have one bad day just plan on doing better the next. I have some great sweet tooth fixes, so I have no excuses for my slip up. But it’s all good. I got my mindset right and ready to dig into this nutrition training ♥️ Knowledge is power people.

🍗150 gr of chicken breasts - cut in 2 pieces and grill in oven (250c -20 mins)
🧀Cut 1 slice of cheddar in two and top chickens after they are well grilled
🥗Wash 2 iceberg lettuce leaves
🍅Chop 2 slices of tomatoes
🐔Place tomatoes inside of lettuce leaves then grilled chicken breasts
🍥Add 1 tsp of barbecue+1 tsp of dijon mustard
