  • CULT /JAP CAKES : the ramen to my sushi is not just another matcha ... we call this meringue a Jap cake in good old Cochin, Machaa :) Two meringues sandwiches together with a line of buttercream is how the cones stick together to make a Jap Cake or a Japonaise Cake; Nevertheless, contrary to popular belief, this cake has nothing to do with Japan, (what a bummer )and sorry you aren’t the only one to be flummoxed as much as I am , right now to think that grandpa lied to me after a movie at Shenoys back in the 90’s that this cult favorite owes credits of nomenclature to the land of the rising sun. If not for being sandwiched in a land that disregards matters too fancy for their own good, this Jap cake could have attained a cult like how good old bakeries like Thoms Bakery in Bangalore or Yazdani  Bakery in Mumbai still celebrates age old traditional favorites of the pre-globalization, doordarshan era. MG Road has certainly had a face lift over the years albeit three things that remain unfettered : 1)The Vistarama Projection since late 1960’s at Shenoys Theatre, 2)this Jap Cake since the late 70’s from Society Bakery , and 3) the never ending, ever so deep potholes of urs truly, MG road’s cheap alibi : chittoor road...Period.   • After a long day it can be really hard to make good food choices. You are probably famished and too tired to cook so either order in or snack on junk food. Fatigue & hunger = bad choices. Here are some tips to make it easier to end the day on a high note: 🍀Prep food in advance. If you already have veggies washed & chopped it's easier to grab them for a quick meal.
🍀Learn a recipe that has 5 or less steps so you can make dinner in 30 mins or less.
🍀Before eating, drink a glass of water or cup of hot tea. Sometimes you are dehydrated which makes it harder to make good decisions.
🍀Keep healthy snacks on hand so you can fuel yourself between meals. 📸 @mashandspread

  • Pan-fried branzino filets with a Dijon mustard-crème fraîche-caper-lemon sauce that uses condiments that are probably already in your fridge.

Heat some olive oil in a nonstick pan on medium high, pan fry branzino filet (or snapper or any other thin filet) skin side down for about 3 min until skin is golden and crispy.  Carefully flip and cook the other side for a minute. Transfer to a plate. Reduce heat to low, add in about 1/2 cup crème fraîche until melted, stir in a spoon of Dijon mustard and about 1 tbsp of minced capers.  When everything is combined, stir in some chopped parsley and a couple tbsp of lemon juice.  Serve with the fish with more lemon, and alongside some pasta or crusty bread.

Lemon Chicken Stuffed w/ Spinach and Mozzerella and Roasted Lemon Potatoes.
.
4 chicken breasts partly butterflied (slice a pocket on one side)
Some fresh spinach leaves
8 slices of mozzarella (regular kind not the fresh type)
Garlic powder 
2 lemons (for juice and zest)
5-6 Russett potatoes, peeled, cut longwise in quarters
Salt and pepper
Heavy cream.

Preheat oven to 400F.  Place prepared potatoes in a large non reactive baking dish.  Sprinkle generously with garlic powder, salt, oregano, and a little black pepper.  Add enough olive oil to coat potatoes and bottom of dish.  Mix in juice and zest of 1 lemon .  Bake for 1 hour with no cover, mixing every 15 mins.  If potatoes begin to look dry, add a little more olive oil. .

Take the 4 prepared chicken breasts, sprinkle some salt in the inside pocket of each.  Tuck 2 pieces of mozzarella and 5-6 spinach leaves into each pocket.  Sprinkle top of each chicken with salt, a very generous amount of garlic powder, and some paprika.  Using a non-reactive oven proof skillet, sprayed with vegetable oil, over medium fire, brown chicken on seasoned side.  When seasoned side is brown, add same seasonings to other side, and flip to brown.  Remove browned chicken to a holding dish and deglaze pan with the juice of 1 lemon, and the zest.  Use spatula to scrape all of the brown bits from pan.  Add about 1 cup of heavy cream and stir over low fire until slightly thickened.  Return chicken to skillet, place over cream sauce, and bake at 400 degrees for 20 mins until chicken is cooked.  Add roasted potatoes, chop extra spinach leaves and sprinkle over dish, and serve.
