Separa bene gli albumi dai tuorli. In una ciotola, con le fruste elettriche, monta i tuorli versando metà dose di zucchero. Quando sarà chiaro e spumoso, con le fruste in funzione aggiungi il mascarpone poco alla volta. Tieni la crema da parte.⁣⠀

Pulisci le fruste e, in un'altra ciotola, monta a neve ben ferma gli albumi versando il restante zucchero poco alla volta.⁣⠀
⁣⠀
Versa un cucchiaio di albumi nella ciotola con i tuorli e mescola per stemperare. Aggiungi poi la restante parte di albumi, poco alla volta, mescolando delicatamente dal basso verso l'alto.⁣⠀

Composizione: distribuisci sul fondo di una teglia 30x20cm un generoso cucchiaio di crema.⁣⠀
Inzuppa i savoiardi nel caffè freddo, da un lato e poi dall’ altro. Distribuisci i savoiardi imbevuti sulla crema, tutti in un verso, ottenendo un primo strato. Distribuisci sopra un altro strato di crema livellandola. Crea poi un altro strato di savoiardi e un altro di crema. Spolverizza con il cacao e fai rassodare in frigo per 2 ore!⁣⠀

  • Fourme d’Ambert selected by @mons_fromager_affineur , Auvergne Rhônes-Alpes

The Fourme d’Ambert is one of France’s oldest blue cheeses and has been an AOC cheese since 1972. The AOC stipulates that the cheese can only be made from cow’s milk from the Puy-de-Dôme, Cantal and Loire communes. An independent body also ensures that the cows spend a minimum of 150 days a year roaming free in the pastures and their fodder has to come from within the AOC-determined region.

The moulded cheese has an instantly recognisable cylindrical shape (fourme) with a grey natural rind encasing an unctuous ivory pâte mottled with blueish-grey pockets.

The persillage (internal structure of blue pockets) is achieved by adding specific strains of Penicillium roqueforti to the fresh curd before it is moulded, salted and lightly skewered to allow aeration. The cheese is then sent to the affinage caves for maturation and can be called a Fourme d’Ambert from one month of age.

Strong aromas of the forest greet you as soon as you remove the foil wrap but this blue is actually mild and slightly tangy on the palate with distinct notes of butter and cream.

Serving suggestion:
Enjoy this classic French blue with a chilled Sauternes.

糖使用赤藻醣醇(低升糖的糖貴桑桑)
因是要給家人吃就烤了比較熟了些
個人喜愛半熟路線(原食譜烤溫也是)
莓果醬是自己一早起來現煮的
酸酸甜甜的搭著乳酪蛋糕吃

.🍎Alors que le jour se lève, là bas, derrière les montagnes aux sommets enneigés des Pyrénées,  il est déjà temps pour moi d'attaquer la dernière journée ici à Font-Remeu, se fut 3 jours speed et intense, je n'ai vraiment pas vu le temps passer !! En tout cas les paysages sont sublimes et le soleil et dans la place et ça, ça fait plaisir 💛
Du coup aujourd'hui au programme: les finales et la remise des diplômes des jeunes officiels nationaux, j'espère vraiment avoir réussi le test 🍀
Puis retour à la maison...
Alors avant d'attaquer cette grosse journée, un bon petit déjeuner s'impose comme THE solution pour tenir le rythme.
Et quoi de mieux que mon tout dernier super bowlcake cuit au @vitaliseur façon Apple Pie, fondant, croquant et moelleux, hyper savoureux, sain, #vegan , #glutenfree et #sugarfree pour se faire plaisir sainement🤗

.👉 Pour 1 Bowlcake 👉 Si vous avez un @vitaliseur , remplissez suffisamment la cuve d'eau, puis portez à ébullition. Pendant ce temps, préparez le bowlcake. Pour cela mélangez ensemble dans un bol  25 g de flocons de sarrasin @celnatofficiel , 25 g de farine de sarrasin @celnatofficiel , 1 càs de poudre de noisette, 1 càs de floraline, 1 các de maca @nu3_fr , 1 các de cannelle, 1/2 các de 4 épices, 1 các de graines de chia et 1 các de levure. Ajoutez 100 g de compote SSA, 45 g de yaourt végétal SSA, 50 g de jus de pommes, 2 dattes hachées @auroyaumedesdattes, 1 poignée d'un mix de noix concassées, 80 g d'eau, 50 g de lait végétal SSA, 1/4 de pomme en cubes et enfin finissez par 1/2 các de bicarbonate + 1 càs de vinaigre de cidre.
Mélangez bien pour obtenir une belle pâte.
Lorsque l'eau de votre @vitaliseur boue, placez le bol dans le panier vapeur. Faite cuire 30 min sans soulever le couvercle. Laissez ensuite tel quel sans soulever le couvercle toute la nuit ou au moins 2h.
Démoulez et dégustez en ajoutant les toppings de votre choix avant de vous régalez.
Option micro-ondes: 2 min pleine puissance, placez une assiette sur le bol et remettez 1-2 min à pleine puissance.
