Patliçan kebap - grilled aubergine, lamb, tomatoes and peppers.

The name “Turk” was first used by the Chinese in the 600s to describe nomadic people who established a large empire stretching from Mongolia to the Black Sea; thus their cuisine is related to the people of Northern China i.e based on wheat (rather than rice) and animal husbandry including milk and milk products the herds could produce. For example, they milked animals and stored milk for traveling in the stomachs of slaughtered animals, which caused the milk to curdle and make yoğurt. They defeated the Byzantine Empire’s soldiers at the Battle of Manzikert in 1071, which opened up Anatolia for Selçuk Turk occupation (except for Constantinople). This period of Selçuk Turk occupation of Anatolia also offers insight into the origins of modern Turkish food culture:

The house, hearth, sofra and plates should be clean. The room must be outfitted with cushions, and the food and drink should be top quality. Again, so that the guests may eat comfortably, the foods and drinks should be clean and flavorful. All that is to be eaten and drunk should compliment each other and be abundant. The guest should never run out of drink, and when one drink is finished should be immediately replenished. […] After the food and drink, give nuts and fruit.

In later adulthood, people were recommended to eat mostly hot things. By age 60, hot foods only should be consumed. Another important message was that to remain healthy, one must take a medicine called “little”- meaning that people should always eat little to live a long life. During a meal Turks say " Afiyet olsun " - let health be

☀️☀️☀️☀️☀️☀️☀️☀️☀️☀️☀️☀️☀️☀️ A series of Instagram images to form Volume 2 of a book on The Turks, presented to the Royal Photographic Society. A juxtaposition of Asia and Europe, antiquity and modernity, Islam and secularism. A heady mix amongst a warm hearted, hospitable and friendly people living in a land of stunning landscapes and architecture.

On Mar 14th 1612 ( ie 407 years ago to the day) , Cornelius Haga went to Istanbul. Since then, the bilateral trade volume between Turkey and Holland rose at $7 billion in 2017.
Main export items from Turkey to Holland are transportation vehicles, automobiles, station wagons, race cars, textile; whilst main items of Turkey from Holland are scrap iron and steel, polyacetals, epoxide– alkyde resins, petroleum and oil products, tractors. Between 2002- 2017, total direct investments from Holland to Turkey were $23 billion & $10 billion from Turkey to Holland. Approximately 800 thousand Dutch tourists visited Turkey in 2017. Amongst other sites, arguably the world's first religious site is at Göbekliteke. We are flying with some of the Dutch tourists via KLM.
